‘Hubbub Cooks’ is a series of cooking classes I am running in collaboration with Hubbub - a fantastic little company that delivers top quality food from my local independent shops - butcher, fishmonger, cheesemonger, deli and more.  The classes are open to anyone, and will be for just eight people at a time so everyone will get plenty of action.  10% off if you book three classes!

Pasta & Risotto workshops
Make pasta dough from scratch and then have fun rolling, cutting and shaping it into tagliatelle, malfatti, ravioli and tortellini. You’ll make sauces and fillings for each shape and learn the secrets of boiling and tossing pasta correctly. In addition, you’ll master the technique for making risotto and create two delicious versions using seasonal ingredients. The workshop will end in a convivial feast with Italian wines.

The Cooking Club is a monthly series of classes that you can dip in and out of as you please.  Classes are usually held on the second Tuesday and Wednesday of the month, 6-10pm.  At each class we cook a seasonal supper, the stars of which are Riverford's beautiful organic vegetables and fruits. 

Each class focuses on different produce and culinary techniques, so if you attend several they form a course.  You will develop knife skills and learn easy but delicious dishes you can repeat at home.

Classes end with an informal meal together around the table with some good wine, and recipes to take home.

This recipe was inspired by the one I learnt while working briefly at Zibibbo - a fantastic restaurant in Florence.  There they make it with lots of capers, which balance the rich creaminess of the livers, and serve it with toasted brioche and blood orange zest and port syrup.  Yum!

This recipe makes a fair bit, so if there are just a few mouths to feed you could do a half batch.
