This is a half-day hands-on workshop limited to just lucky 8 guests who will learn the secrets for ensuring perfectly baked cakes every time.  You will make three different kinds of cake - pound, genoise and chiffon - plus buttercream, curd and other luscious fillings - and get one to take home.

This class is for serious chocolate-lovers!  You will learn a pastry chef's secrets for making perfect chocolate confections and desserts, including flavoured truffles dipped in tempered chocolate, chocolate panna cotta, the ultimate chocolate cake and more…

This is a demonstration class, with plenty of tastings and drinks, and chocolate treats to take home too.

Perfect Pastry Masterclass, 22nd & 23rd Jan 2011

This is a full-day hands-on workshop limited to just 8 guests.  You will mix, roll, shape, bake and fill an astounding array of sweet and savoury pastries - some to enjoy for lunch with a glass of wine, and some to take home. 

Jennifer will cover the techniques and secrets of making perfectly flaky yet tender pie crusts, puff pastry, sweet short crust tarts and choux pastry (éclairs, gougères...).  You will never be intimidated by pastry again!

Jennifer Altman, pastry chef

I had the pleasure of meeting and working with Jennifer Altman when I started out in my culinary career in San Francisco.  Jennifer, originally from Glasgow, is the pastry chef at Bay Wolf restaurant  - one of the top restaurants in the San Francisco Bay Area.  She is a highly experienced professional pastry chef and class instructor, having trained at San Francisco’s famed California Culinary Academy, taught professional level courses at Tante Marie’s Cooking School, and often attracted high prize for her delicious desserts in restaurant reviews

Jennifer entered her first and last baking competition as a child - her towering multi-layered meringue cake was deemed too good for an eight-year-old to make and was disqualified!  Her cakes, cookies, confections and desserts continue to astound and delight diners and students.  As Jennifer is also a food scientist by training her classes are the perfect opportunity to learn about the fascinating chemistry of baking, pastry and confectionery. 

In January 2011 Jennifer is flying over to London to run a series of very special masterclasses with me:
